  1. These three pasta dishes are all fantastic. But I have visions of Gnocchi alla Romana dancing in my head! Is there a reason to make them round? Because I think they would make a great sheet pan dish, with p(o)lenty of butter, grated Parmesan, and is it sage? I forget: do they have any semolina in or under them?

    I very much appreciate the absence of meat in these dishes. Although I'm not a strict vegetarian, I like to take a break from meat more often than not these days. That way I can save up for a hunk of killer A5 Wagyu or some fillets of Dover sole or Chilean sea bass or swordfish, or a couple of soft shell crabs to pan fry for a wonderful sandwich.

  3. Another fantastic and irristable selection of Pastas.I tend to sahy away from making my own pasta but you are making me change my mind. Eva makes it all look so easy and her light touch with seasoning is truely Italian. You are both like members of my family Eva has the spicy strong and opinionated personality of all of the women Im grew up with. Harper is perfect with her as he is easy going and goes with the flow, just what she needs and a perfect match is made. Bella figura for both of you!! Thank you again – but that joke was the worst!!

  6. THAT'S called a delicata squash in Italy? I've had "delicata squash" in America, but it didn't look like that.
    That squash IS labeled kobucha at my grocery store. Kobucha is the Japanese word for pumpkin.

  9. I'm lucky to have porcini's and chanterelle's where I live in Humboldt, ca. Will definitely be trying this recipe, not sure about attempting the fresh pasta though 😆

  10. Another cheese that goes perfectly with squash is gorgonzola. It's a bit sweet, a bit salty, a bit spicy and super creamy. It's my favourite ingredient to go with squash 😊

  11. My dad and twin brother went foraging for mushrooms every fall in upstate NY. I was the official bottle, erm, mushroom washer. So many memories came rushing back watching this video. I make homemade potato gnocchi a lot. So easy and one of my all time favorite dishes.

    I use butternut squash for pasta sauce. 😋 what a great idea to add it to the gnocchi dough!
