I made this tet noodle dish from Madame Vo NYC, but I used cascatelli noodles instead of egg noodles.

    Boil your noodles. The original recipe uses egg noodles, but I wanted to try cascatelli

    1) Mix the following to make the sauce:

    2 tbsp tomato paste

    1/2 cup heavy cream

    1 tsp fish sauce

    1 tbsp sugar

    1 tbsp pepper

    2) Fry the garlic and shrimp (separately)

    mince garlic (fry garlic in oil until it’s evenly browned)

    tiger shrimp (fry)

    3) Assemble:

    1/2 stick butter

    5 cloves of garlic (smashed, cook until lightly browned)

    Add sauce

    Add cooked noodles

    Add cooked shrimps

    Garnish with scallions, cilantro, and fried garlic crisp
