  1. For the Sauce :
    To 1 Tbps of EVOO , add 1/2 TBps of butter. Add Onions (Red or White as per your preference). Once caramelised, add 2-3 cloves of garlic, 1 whole red chilly and Mildly Sauté. Parallely, blanch 4-6 medium sized tomatoes. Removed the skin after running under cold water and grind or cut as per your preference. Add the tomatoes to sautéed onion and garlic. Add, just a tiny bit of red chilly powder for color and 1/2 tps of white wine vinegar for the extra kick. Then when the sauce starts reducing add half of the basil you want to add in the sauce and keep the rest for garnishing.
    I like to cook until the sauce is reduced and then add 1/2 cup of pasta water for the extra creaminess.
    Boil pasta of your choices as per the instructions on the box until it’s al-Dante and then add it to the sauce.
    Take off the heat and garnish with Basil and some Parm (I was out of cheese so I couldn’t add it).
