Recipe
12 medium potatoes
1 onion sliced
1 tbsp fresh dill and extra for serving or omit
Sauce
1 1/2 cup raw cashews soaked in hot water for 30 min at least or overnight
1 tsp salt
1/2 tsp black pepper
1-2 garlic clove
1 lemon juiced
2.5 cups water
Cook sliced potatoes for 10 min or steam for 13 min.
Put all the sauce ingredients in the blender and process until creamy.
Pour the sauce over potatoes and onion, sprinkle with dill, mix and bake at 410 F covered for 30 to 40 min until soft. Uncover and set to broil for 5 to 8 min until a little golden on top.
