Ingredients: – 1 medium-sized eggplant – 1/4 small onion – 10-15 cherry tomatoes or datterini tomatoes – 200 ml tomato sauce – 100 g ricotta or goat cheese – 200 g mezze maniche or other short pasta – Basil leaves – Salt – Extra virgin olive oil
Instructions: We cut the eggplant into small cubes and sauté it with olive oil. Once cooked, we set it aside. In the same pan, we sauté the finely chopped onion over low heat until it softens. We add the cherry tomatoes and let them cook (still on low heat). Next, we add the tomato sauce, adjust the salt, and add some basil leaves. Meanwhile, we cook the pasta in salted water until it’s al dente, then drain it and add it to the sauce. We add some cooking water to create a creamy texture. We also mix in the sautéed eggplant and stir well. Finally, we turn off the heat and add the ricotta, stirring well. Before serving, we add some more ricotta and fresh basil leaves.
