here’s a simple recipe for mini eggplant pizza that’s low in carbs:

Ingredients:
2 small eggplants
Olive oil
Salt and pepper to taste
1/2 cup low-carb marinara sauce (check the label for carb content)
1 cup shredded mozzarella cheese
Your choice of low-carb toppings (e.g., sliced cherry tomatoes, sliced olives, chopped bell peppers, sliced pepperoni, etc.)
Fresh basil leaves (optional, for garnish)

Instructions:
Preheat your oven to 400ยฐF (200ยฐC).

Wash the eggplants and slice them into rounds, about 1/2 inch thick. If you prefer, you can peel the eggplants before slicing, but it’s not necessary.

Lay the eggplant slices on a baking sheet lined with parchment paper. Brush both sides of the slices with olive oil and sprinkle with a pinch of salt and pepper.

Bake the eggplant slices in the preheated oven for about 10-15 minutes, or until they are tender and slightly golden. Keep an eye on them to prevent overcooking.

Remove the eggplant slices from the oven and let them cool slightly.

Once the eggplant slices have cooled a bit, spread a thin layer of low-carb marinara sauce onto each slice.

Sprinkle shredded mozzarella cheese on top of the marinara sauce.

Add your choice of low-carb toppings on each slice. Get creative with your combinations!

Place the topped eggplant slices back into the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let the mini eggplant pizzas cool for a minute or two before serving.

If desired, garnish with fresh basil leaves before serving.
