tagliatelle alla bolognese

evan funke’s pasta recipe and method, marcella hazan’s bolognese recipe.

it was great, but i definitely didn’t roll out the pasta thin enough. it was my first time making pasta sheets without using a machine. it’ll be better next time.

i ran pork shoulder and beef chuck through a meat grinder for the bolognese. the sauce was brilliant.
