This pasta dish is packed with protein, omega-3 fatty acids, vitamin B12, and selenium. Crab can be replaced with lobster if preferred.
Serves 2-3
Ingredients:
Calamarata or pasta of choice
Fresh crab meat (get from your local fishmarket, or use a can)
Parsley
1 lemon (zest + juice)
2 tomatoes, roughly cut into large chunks
2 garlic cloves smashed or thinly sliced.
2 calabrian Chilis or more, plus oil
Small nub of cold butter
Burrata (optional)
Directions:
Bring a large pot of water to a boil, generously add salt just before you add your pasta. Heat a medium-large saucepan on medium heat. Once hot, add olive oil and garlic.
After a minute or two, add your chilis and cook for another minute. Pour in your sliced tomatoes, add a generous pinch of salt and cook for 5-6 minutes until they have softened.
Check your pasta, the key is to remove it when still extremely al dente and finish cooking in your sauce. Add a ladle of hot pasta water to your sauce, and bring the heat up. Using a slotted spoon, transfer your pasta to the sauce with an extra ladle of pasta water
Your sauce should be very liquidy, this is what you want! Stirring constantly, cook your pasta for another 2-3 minutes until perfectly al dente.
Kill the heat, add your parsley and cold butter, stir well until the sauce emulsifies (add more pasta water if needed). At the last minute, add your crab, fresh squeeze of lemon juice, stir, and give it a taste.
Plate, add burrata, lemon zest, and olive oil and enjoy!
