I used 2 decent sized baked potatoes scooped out and mashed.
1 large egg cracker into the potatoes and mixed together
Salt of course
All purpose flour, I didn’t do any measurements I just slowly added flour until it wasn’t very sticky
I cut the dough into 4 even sections and rolled those sections into tube shapes and cut them evenly into shape
I boiled them in a rolling boil until they started to float to the top (moving them around so they don’t stick to the pot) and waited alnother minute and then put in a frying pan with olive oil over medium heat flipping halfway through and cooking until it’s golden brown

They look great! Rustic and delicious. The recipe is pretty much how I make them (not that either of us are necessarily right !! Lol) but I get requests from my family to make again and again so that is my test of success!
I experiment with different sizes as well from really small to large, in my opinion yours are on the large side of the scale but that has its place as well depending on the kind of sauce you are matching it with (good work on the brown butter by the way did you add some fresh sage leaves?).
If I am really trying to impress I have a little wooden gnocchi board with the groves that I roll them down but as often as not I just cut them in to pillows and cook !
And just so you know to give yourself a pat on the back, I have also had some disasters when I tried to add ricotta cheese and reduce the potato and flour to make an even “lighter and fluffier” version. They came apart in the pot and I had “nothing”, so even though they are pretty easy to make you should feel good about nailing it!!

that’s good, I also tried but mine get sticky too much may b I used less quantity of flour 😏

I’m Italian and my mom grew up with her family making homemade pasta, sauce, wine, from grapes and tomatoes and etc etc from outside. I hate gnocchi. It is so chewy and gummy. It feels like I cook it wrong every time but it feels the same even at a restaurant..
Can someone tell me what is wrong with me? Is it just me?
