  1. Sauce looks great. It would be very Italian to add the slightly undercooked pasta directly to the sauce in a sauté pan over low heat and flip repeatedly to combine. Add small amounts of pasta water if the sauce tightens too much. The cooking will finish in a minute or two and the pasta will absorb a lot of flavor. Then plate the sauced pasta and execute the cheese snowfall.
