High Protein Low Carb Italian Pasta Salad Recipe!

My low carb pasta has just 2-6 net carbs and packs 20 grams protein. Pasta as the base then added cherry tomato, diced English cucumber, red onion, picante salami, parsley, black cured olives, and roasted red peppers. The flavors, colors, and textures, were unreal!!

Here is how I made it:

1. First, prep all of your ingredients. I chopped up about a quart of cherry tomato, 3/4 of an English cucumber, 1/2 red onion, 1 super large handful flat parsley, 3/4 cup black cured olives, about 1/2 cup of roasted red pepper (I used these from a jar, or your can roast them yourself), then cubed up about 4oz of a spicy Italian salami. You can omit this, or add your favorite meat/protein.

2. For the dressing, I used spicy olive oil, but you can go with regular olive oil as well. I just combined 1/2 cup olive oil, juice from 1 lemon, 1/2 tsp dried oregano, 1/2 tsp red chilli flakes, a couple of pinches sea salt, and fresh ground pepper into a glass jar, put the lid on, and shake it.

3. Then lastly, I made the pasta. I boiled 1 carton of Kaizen low carb Cavatappi pasta for 5.5-6 minutes in salted water. Drained it, cooled it off with cold water to stop the cooking, drained it again, and then added it to the bowl’s base.

4. I added the remaining salad ingredients, then the dressing gave everything a good toss and devoured.

This is best served right away, but it should hold up for a few hours before you finish it all 🙂
