Ahhh!! So today, while I wait for the septic guys to show up, I get started on my Christmas cards & I make soup.
*** Tomato Tortellini Soup Recipe
1/2 medium onion chopped
1 tbs olive oil
1 tbs butter
1 clove garlic minced
2 tbs flour
2 cups chicken broth or veggie broth
1 can diced tomatoes with juice
1 can crushed tomatoes
2 dashes Italian seasoning
1 tbs brown sugar
1 cup heavy whipping cream
2 cups cheese tortellini
1 tbs fresh basil
freshly grated parmesan cheese
melt butter and saute onion
stir in garlic & flour
whisk in chicken broth until flour is dissolved
add canned tomatoes, Italian seasonings, sugar and cream to pot.
Once soup is boiling add tortellini and reduce heat to simmer.
add salt and pepper to taste
sprinkle with cheese as desired
