    Unfortunately I cannot taste. It looks really Italian. Good effort!

    Be careful: there must be absolutely no air inside the jar. Oil must cover everything up and there must be no part of the eggplant exposed to air, which seems not to be the case of the third jar.
    This could lead to the production of the botulinum toxin, that can be lethal.
