What is Maiale al latte? If you haven’t heard it is a traditional Italian milk-braised pork that’s so comforting and delicious.The pork is incredibly tender and flavorful. Plus it’s easy to make, and with the help of our beloved Instantpot, doesn’t even take that long !
For this dish, I choose full-fat greek yogurt which give some really nice ‘tang’ that I think goes very well with the citrus aroma of lemon peel. However traditionnally, it is made with whole milk (around 500ml for a kg of pork) so feel free to try it out too.
Either way, the depth of flavor this one brings will have you reaching for it again and again, especially in this chilly weather! So I hope you give it a try 🙂
Ingredients:
1 tablespoon olive oil
100 gr smoked bacon
700g pork shoulder, cut into chunks
½ tsp kosher salt
¼ tsp freshly ground black pepper or to taste
75gr – 2 small yellow onion
15gr – 4 cloves garlic
1 1/2 cups water
¾ chicken stock cube
1 tsp sugar
150 gr greek yogurt
½ tsp dried sage leaves or 2 tbsp fresh ones
Peel of half a lemon
½ tsp red pepper flakes, or to taste
