Italian Pasta Bake with Eggplants | Sicilian Recipe
Ingredients:
• 320 g of rigatoni pasta (11.3 oz)
• 2 eggplants
• 600 ml of tomato puree (2 cups + 1/2 cup)
• 1 clove of garlic
• 6 basil leaves
• 300 g of mozzarella (10.6 oz)
• 70 g of grated Parmesan (1/2 cup)
• 2 tablespoons of extra virgin olive oil
• salt to taste
• vegetable oil for frying q.s.

Bake the pasta at 355F (180C) for about 30 minutes.
Notes:
• Let it cool down a bit before serving it
• You can even freeze it for up to 2 months
