
Simple dinner today with a little red wine. Fettuccini with clams.
I got a frozen pack of clams (1 lbs) from Safeway. Sautéed with fresh garlic on evoo, anchovies, oregano, some white wine, a little butter and a little heavy cream to moisten this up a bit so as to not to tune out dry on the pasta end. Topped it with chili flakes and Parmesan cheese. I didn’t have the chopped parsley but I’ll have to incorporate next time.
Anyways, what would be a good side to this dish? Perhaps some broccolini or asparagus? Maybe even slices baguette? This dish has been getting better and better the more times I make it.
