One Pan Mediterranean Cod Recipe

Serves: 6

2 lbs. Cod, boneless, skinless
1 small onion, halved and thinly sliced
1 ½ C marinated artichoke hearts, quarter if whole (jarred)
1 C pitted kalamata olives
10-ounce variety pack snack tomatoes (grape or cherry tomatoes are fine)
1, 14.5-ounce can diced tomatoes
1 tsp. Italian seasoning
½ tsp. garlic powder
1/3 C chardonnay (any dry white wine)
Juice of half a lemon
Kosher salt
Ground black pepper

This is so good and super easy! One casserole dish is all you need (9 x 13).

Preheat your oven to 425 degrees.

Make sure you pat dry your cod with paper towels to remove excess moisture. Liberally season both sides of the cod with kosher salt and ground black pepper. Place the diced tomatoes, sliced onions, artichoke hearts, olives, fresh tomatoes, white wine in your casserole dish. Season this with your Italian seasoning, garlic powder and a pinch of kosher salt and ground black pepper. Give this all a stir.

Finally, nestle your cod amongst all this goodness and squeeze half a lemon over everything in the dish. Bake for 18-22 minutes depending on your preferred doneness. I like mine cooked all the way through until it’s flaky. Enjoy!

Note: This dish creates a beautiful broth! You could serve this with rice, polenta or just a big crusty Italian loaf of bread to soak up the delicious broth.
