Deviled eggs are a classic appetizer that I love to serve at celebrations or for the holidays. These disappear quickly, so I usually double the recipe. Theyโ€™re topped with crispy Prosciutto to give them a nice salty crunch. Feel free to experiment with different toppings to make this recipe your own.

BEST DEVILED EGGS RECIPE

Ingredients
6 eggs, boiled and cooled
1/4 cup mayonnaise
1 teaspoons Dijon mustard
1 teaspoon white wine vinegar
1/4 teaspoon Tabasco sauce
1 tablespoon scallions, minced
1 tablespoon fresh scallions
1 tablespoon fresh dill
1 tablespoon Italian parsley
1/4 teaspoon Kosher salt
1/8 teaspoon freshly ground black pepper
2 slices of Prosciutto
Paprika, chives or Italian parsley – optional for garnish

Directions

To boil eggs
Place the eggs in a large pot and fill with cold water, covering the eggs with about an inch of water. Bring the water to a boil. Once the egg are boiling, remove from heat and cover.
Set a timer for 11 minutes. While the eggs are sitting, fill a large bowl with ice and water. When the timer ends, remove the eggs and place them in the ice water to cool. Once cooled, remove eggs from the water.

Slice cooled and shelled hard-boiled eggs lengthwise. Separate the egg whites from the yolks. Place halved egg whites on a serving dish Refrigerate eggs until ready to use.

To Cook and Crisp the Prosciutto
Preheat oven to 350 degrees and prepare a quarter sheet pan with parchment paper. Place the prosciutto sliced on the pan and cook for 10 – 12 minutes until the prosciutto is crisp. Cool then chop into small pieces and set aside.

To Make Deviled Eggs
In a medium bowl, add yolks. Mash the yolks until they are crumbly Add the mayonnaise, Dijon mustard, vinegar, Tabasco sauce, scallions, scallions, dill, parsley, salt and pepper. Mix well until creamy. Adjust the salt and pepper if necessary.

Spoon yolk mixture into egg white halves. You can also use a pastry bag to pipe the egg yolk mixture into the halved egg whites or make your own. Take a quart-sized plastic bag, cut off a small end, fill it with the Youk mixture and pip it into the halved egg whites. Top the eggs with Prosciutto. paprika, parsley or chives if desired.
