Hey everyone! I've seen a lot of people ask about seasoning the chicken before sauteing. I don't add salt because the prosciutto and chicken broth can add all the salt you need, so it's really up to you after the dish is done. My dad growing up didn't enjoy black pepper so you'll notice most, if not all of my recipes, I don't use black pepper. Other than that, you can always tweak my recipes to fit your taste. Some people like adding butter to the broth to make it richer and thicken the sauce. You can also add some white wine to the broth to brighten the flavor and make it a bit more savory! P.S. My favorite dish at one of the local chain restaurants (Carrabba's) is Pollo Rosa Maria. It's similar to this dish but the chicken is butterflied and it has Fontina instead of Mozzarella and it's served with a lemon basil butter sauce. We have great authentic Italian restaurants in our area (Baltimore has a Little Italy district) but somehow, this dish is still my favorite. 😍
