    Cooked egg aside it doesn’t look too bad if it one of your first attempts.

    Which recipe did you follow?
    Also if you want to pasteurize the egg without cooking it you might want to try using a waterbath, the fool proof way is to put the egg/cheese mixture in a bowl over the pot with the boiling water for the pasta and use the heat from the steam to pasteurize it while you wisk it with a fork.
