1. Sausage and Spinach Baked Ziti

Ingredients:

1 pound sweet or hot Italian sausages
1/2 cup chopped onion
3 large garlic cloves, chopped
1 (28-ounce) can diced peeled tomatoes
1/4 cup pesto
10 ounces ziti or penne pasta (about 3 cups), freshly cooked
4 cups baby spinach leaves
6 ounces grated or cubed mozzarella cheese
1 cup grated Parmesan cheese
Instructions:

Cook sausage, onion, and garlic until sausage is cooked through.
Add tomatoes with juices and simmer until sauce thickens slightly, stirring occasionally, about 10 minutes.
Add pesto and season sauce with salt and pepper.
Preheat oven to 375°F. Lightly oil a 13 x 9-inch glass baking dish.
Combine pasta, spinach, mozzarella, and 1/3 cup Parmesan cheese in a large bowl.
Stir in warm tomato mixture and place it in the prepared baking dish.
Sprinkle remaining 2/3 cup Parmesan cheese over the top.
Bake until sauce bubbles and cheeses melt, about 30 minutes.

2. Sweet and Spicy Sausage and Pepper Pasta

Ingredients:

2 cups brown rice rotini pasta
1 tablespoon butter
1 tablespoon olive oil
1 yellow bell pepper, cut into strips
1 red bell pepper, cut into strips
1 medium sweet onion, cut into thin strips
3 cloves garlic, minced
3 links hot Italian sausage
1 (14.5 ounces) can diced tomatoes
1/2 cup tomato sauce
1/2 teaspoon dried basil
1/2 teaspoon granulated garlic
1/2 teaspoon crushed red pepper flakes
1/4 cup heavy whipping cream
Instructions:

Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain and reserve 1/2 cup pasta water.
Meanwhile, heat butter and olive oil in a heavy skillet over medium heat. Add bell pepper strips, onion strips, and garlic and cook until softened, 4 to 5 minutes.
Add Italian sausage, diced tomatoes, and tomato sauce. Stir to combine, cover, and cook for 15 minutes.
Remove sausage links and cut on the diagonal into coin slices. Return sausage slices to the skillet.
Season with basil, garlic granules, and crushed red pepper flakes. Stir to combine.
Mix in heavy cream and reserved pasta water. Cover and cook sauce for 8 more minutes.
Divide cooked rotini amongst plates and serve topped with sauce.

3. Grilled Italian Sausage with Peppers and Onions

Ingredients:

1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 small white onion, sliced into petals
1 small red onion, sliced into petals
1 tablespoon olive oil
½ teaspoon dried Italian seasoning
Salt and ground black pepper to taste
5 (4 ounce) links hot Italian sausage
Instructions:

Preheat an outdoor grill for medium-high heat and lightly oil the grate.
Combine bell peppers and onions in a large bowl. Add olive oil, Italian seasoning, salt, and pepper; stir well to coat.
Poke 4 holes in each sausage using a toothpick; this will help to prevent them from exploding on the grill.
Place vegetables in a grill basket and cook on preheated grill for 2 minutes.
Add sausage directly to the grate and grill for 4 minutes.
Flip sausage over, stir vegetables, and grill for 4 minutes more.

4. Lasagna Casserole

Ingredients:

1 pound ground beef
1/4 cup chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper, divided
1 pound medium pasta shells, cooked and drained
4 cups shredded part-skim mozzarella cheese, divided
3 cups 4% cottage cheese
2 large eggs, lightly beaten
1/3 cup grated Parmesan cheese
2 tablespoons dried parsley flakes
1 jar (24 ounces) pasta sauce

5. Super-Delicious Zuppa Toscana

Ingredients:

1 pound bulk mild Italian sausage
1 ¼ teaspoons crushed red pepper flakes
4 slices bacon, cut into 1/2 inch pieces
1 large onion, diced
1 tablespoon minced garlic
5 (13.75 ounce) cans chicken broth
6 medium potatoes, thinly sliced
1 cup heavy cream
¼ bunch fresh spinach, tough stems removed
Instructions:

Cook Italian sausage and red pepper flakes in a Dutch oven over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes.
Stir in onions and garlic; cook until onions are soft and translucent, about 5 minutes.
Stir in chicken broth and bring to a boil over high heat.
Add potatoes and simmer until fork tender, about 20 minutes.
Reduce heat to medium; stir in cream, cooked sausage, and spinach.
