This is my grandmothers recipe. I’ve been doing this dish for many years since I was a little boy. This is very easy to make. Here’s what you will need.
1. Eggplant.
2. Breadcrumbs.
3. Eggs.
4. Tomato sauce.
5.  Romano cheese.
6. Fresh mozzarella cheese

Start off slicing my eggplant, you could cut it anyway you like .
Next ’m gonna scramble my eggs & add salt, pepper and my Romano cheese, next, you gonna take the eggplant slices and dip each one into the egg mix and then into your breadcrumbs.
 now you are ready to fry them. I usually use olive oil gives it a better taste after you finish frying them put them aside.
now you’re ready to make your marinara sauce or whatever sauce you prefer.
Next it’s time to layer your eggplant into the pan, then
Add your sauce on top.
next you’re gonna add your fresh mozzarella cheese and then add the eggplant layer on top
I usually make three layers. you want to keep stacking just like you do when you make lasagna
Last step put in the oven get the cheese nice and melted ,then put it on broil, you want to get the cheese a little brown on top and that’s when you know you’re ready to eat
