Hello everybody, today I’ll prepare an agnello alla romana for you, a lamb-based dish better known as agnello alla cacciatora in Latium. The ingredients we need for four portions are: one kilo of lamb in pieces, two bunches of rosemary, 4-5 anchovy fillets, 2 cloves of garlic, 3-4 spoons of white vinegar, salt, pepper and extra virgin olive oil. This lamb is very simple to prepare and it can be directly cooked in a casserole; so we heat 3 extra virgin olive oil spoons up, we add the lamb in pieces and we let them brown. / Then we add some cloves of garlic and a bounch of rosemary / We season it with salt and pepper, we cover it and we let it and we cook at moderate heat for about 20 minutes. Meanwhile we cut very finely the rosemary left and the anchovy fillets. / We put everything in a bowl and we add some vinegar. / So we mix till all ingredients are blended. Once our lamb is cooked, we raise the flame and we add the aromatic compound. Then let’s blend and let it become tasty for a couple of minutes. If during the cooking the lamb gets too dry, it’s better adding 2-3 spoons of hot water/ We finally serve the lamb very hot with some baked potatoes , sauté vegetables or puntarelle alla romana.
