Stewed Lentils is a traditional dish in Italy. Vegan, full of protein and fibers, easy to prepare. In few words: a great alternative to meat, gluten free and super tasty!
INGREDIENTS STEWED LENTILS
LENTILS:
2 cups of large green lentils (about 250 gr)
About 2 cups of water or vegetable broth (500 ml)
1 cup of tomato sauce (125 gr)
2 table spoons of tomato paste (28 gr)
2 shot glasses (1/2 cup) of Red Wine or White if you prefer (about 120 ml)
3-4 table spoons of Soy Sauce (50-60 ml)
SOFFRITTO:
1 onion
2 carrots
1 or 2 celery stalks
2 cloves of garlic
DRESSING:
Salt, pepper, 2 table spoon of a good quality extra virgin olive oil.
A veggie bouillon cube if you want to cook the lentils with the broth.
