These cherry tomatoes confit are easy to prepare and super versatile: perfect as ropping for pizza and focaccia, great tossed with pasta, tasty just alone as appetizer for a classic Italian aperitivo!

INGREDIENTS
1 Pint of cherry tomatoes
Salt to taste
2 tbsp extra virgin olive oil
1 tsp dried oregano
1 pinch of sugar
1 sprinkle of black pepper

Cut the tometoes into halves, then season with the rest of the ingredients.
After that, place the tomatoes on a tray lined with parchement paper and bake in the oven about a couple of hours 285°F.

That’s it: easy, delicious, and vegan!
