    This is one of our family recipes. There was a local restaurant in nyc that used my great grandma’s recipe. It’s closed a few years ago, but glad I got to eat there. Our homemade version tasted better though. 🙂

    Ingredients:-400 g of ziti-800 g of onions-100 g of bacon-50 g of grated Grana Padano-2 tablespoons of extra virgin olive oil-1/2 glass of dry white wine-1 liter of vegetable broth-salt-pepperPreparation:-Start by preparing the onions. Peel them and cut them into thin slices.-In a saucepan, heat the extra virgin olive oil and add the bacon cut into cubes. Let it brown for a few minutes.-Add the onions and let them soften over low heat for at least 30-40 minutes, stirring occasionally.-Add the white wine and let it evaporate completely.-Add the vegetable broth and cook for another 10 minutes.-In the meantime, cook the ziti in plenty of salted water and drain when al dente.-Add the ziti to the saucepan with the onions and broth and mix well.-Add the grated Grana Padano and mix again to mix all the ingredients.-Serve Genovese ziti piping hot, adding a grind of fresh black pepper to taste. Enjoy your meal!
