Kosher salt
1 lb. bucatini or spaghetti
1 c. ricotta
1/4 c. pasta water (reserve more as necessary)
1/2 c. freshly grated Pecorino or Parmesan, plus more for serving
1/2 c. extra-virgin olive oil
Zest and juice of 1 lemon
Combine all ingredient and mix until smooth. Add pasta water to desired consistency, pour over pasta and stir until noodles are coated. Serve immediately. Serves 6.
