I made that viral green goddess dressing and salad today for the first time (kinda winged it without measurements and having to swap out ingredients I didn't have for similar ones but nevertheless) and you come with this recipe I'm like this is genius. I'm always on the look out these days to find easy recipes full of nutrition for my now picky Parkinsons suffering father who has no appetite for eating as much as he needs to keep his energy up. He loves pasta, and loved the dressing and I feel like doing this, this would be something he'd love. Thank you Joanne!!!!❤😊

I'm super happy you found something that works for your body. Ironically, Paleo is what works best for me, but not everyone is best fueled by fats. I'm really pleased that we largely seem to have moved past judging people for what they eat. Much better.

I went very-low carb with my mom when we started eating meals together after my dad passed about a year ago, and I suddenly had constant GI upset—everything from acid reflux to IBS-type symptoms, and I gained 20 pounds because I never had any energy. I chalked it up to depression and stress. Then, I got a random craving for oatmeal and had it as a snack outside of our normal mealtimes. I started reintroducing complex carbs over the course of the next couple of weeks because it instantly made me feel human again. Low-carb is good for some people, but not everyone, and not to the exclusion of things like dietary fiber, which actually helps keep you digestively regular and stabilizes blood sugar.
