Ok, what's the real answer to the Fettucine Alfredo conundrum? The real answer is that we do have them but we don't. Let me explain: the name of this dish is from a famous restaurant in Italy called Alfredo alla Scrofa. In the twenties (IIRC) his wife had recently given birth and was still fairly sick and particular with her food, so he prepared some extremely thin fettuccine which he then prepared them with a very light sauce of butter and parmigiano. Eventually he decided to put them on the menu of his restaurant and there Douglas Fairbanks and Mary Pickford happened to try them, like them and brought them to the US where they underwent a number od modifications.
In Italy we regularly eat pasta with burro and parmigiano, especially when we are unwell or when we are in a real hurry the whole point of the dish was the actual kind of pasta used, not the sauce So if you go to Alfredo alla Scrofa you will find the original Fettucine Alfredo, but most italians don't know of them and just eat pasta with burro and parmigiano…

Yes, fettuccine Alfredo was invented by Alfredo Di Lelio in Rome as 'fettuccine al triplo burro e parmigiano' for his wife in around 1908.😋🧈✨
