This is a very simple and light Italian bean soup that is quick and easy to prepare. This easy bean soup is so tasty that you will definitely want more.
Recipe:
2 carrots
2 small onions
1 large onion
2 garlic cloves
1.5 liters (6 glasses) water
3 black peppercorns
olive oil
1 celery stalk
1 can of chopped tomatoes
2 cans of white beans
100 g spinach
2 teaspoons dried basil
1 teaspoon dried oregano
salt to taste
pepper to taste
100 g spinach
Parmesan

    I would add chi🎉or beef bullion cubes …adding the skins of the onions would add color to the broth…add greens from carrot to boiling water add nutrients… any meat bones,, beef. Chicken or ham bones to water for flavor and more nutrients…and some pasta…yum

    You could switch the recipe at different times by using arugula, chard, or kale instead of spinach. I also like cumin seed in soups of this type. 😺

    So, this came from you Itialian friend… Would this actually be considered an Itialian soup? This looks wonderful, I am going to make with the following modifications: 2x the kale for the spinach, 1 can tom paste instead of the diced, and upping the oregano a little… I love finding recipies especially for soups from around the world!
