Didn’t have a lot of gnocchi left that I made from scratch. So added borlotti beans, cherry tomatoes, wilted greens, crunchy red onions and with a pesto sauce made this vegetarian pasta salad. Topped with some ricotta and lemon juice it was very filling and delicious and super easy and cheap!
