    Orecchiette con le cime di rapa – Orecchiette pasta with broccoli rabe

    Preparing “Orecchiette” for Apulians is an art. They created this recipe in the Middle Age, so yes… it’s a part of Apulian history!

    serves 4

    300g fresh orecchiette pasta

    300g broccoli rabe

    garlic

    chili pepper

    anchovy fillets

    breadcrumbs (optional)

    EVO oil

    salt to taste

    Direction

    Immerse the cleaned broccoli rabe in boiling salted water.

    After approximately ten minutes, add the orecchiette pasta to the same water and cook together for a further 10 minutes. Drain well.

    Separately, in a large frying pan, fry the fresh chopped garlic with the chili pepper, a few anchovy fillets and, if desired, plenty of breadcrumbs. Serve with a drizzle of EVO oil.
