So the substitutions were because of not being able to get guanciale and Pecorino cheese. So I used pancetta and Parmesan. Not even Parmigianino because I was at Aldi and that’s what was available. It was a good Parmesan, though. The pancetta from Aldi was nice and chunky and fattier than normal pancetta. Also, I can’t eat wheat so I used 100% buckwheat soba noodles.
8oz pancetta
Two packages of buckwheat noodles
6 large eggs
2 cups freshly shredded Parmesan cheese
2 tbsp cracked black pepper
I like to get the pancetta nice and crispy. Cook the noodles al dente, then scoop them into the skillet with the pancetta so some pasta water does get in there. Mix it up so the noods are coated in fat.
The eggs, cheese, and black pepper are blended and added to the warm skillet and the whole thing is stirred until the cheese melts and it turns into a creamy sauce. Add a little pasta water as needed
The buckwheat noodles make it not as pretty but, eh, they taste good!

Leaving aside the substitutions… I think that is more eggs in there than ideal. Did you put the whole eggs? Usually just the yolk is used

Have you tried quinoa gluten free spaghetti? It’s really good and it might give it a better aesthetic. But it looks tasty none the less!

Pancetta has a weird color in this pic, it looks like carrot, doesn’t it? But putting that aside I wouldn’t say it’s bad, not at all 🙂 Next time use pecorino though, parmesan is too sweet for this kind of dish and it kills it a bit.

Makes me irrationally angry when Americans use ‘noodles’ as a blanket term for all pasta.

Wrong pasta, wrong protein, wrong cheese, wrong egg ratio. I’m sure it tastes great, just don’t call it Carbonara please. Or do it, just be aware that may upset some Italians, as it just happened 😉
