Manicotti with Sausage

Ingredients
7pz box gf manicotti pasta, cooked according to dressing
1 jar marinara sauce
16oz ricotta
8oz parmesan cheese
8oz mozzarella
1/3 cup fresh parsley, chopped
1 tsp garlic, minced
Pinch of salt & pepper
2 eggs
1lb Italian sausage

Preheat the oven to 350 degrees. Spray a 9×13 baking dish with nonstick spray. Cook pasta according to directions. Drain & set aside. In a bowl mix the ricotta, mozzarella, Parmesan, salt, pepper, garlic, parsley and eggs. Set aside. Place a medium size skillet over med heat. Cook the Italian sausage and once completely cooked add the marinara. Add the ricotta mixture to a piping bag and pipe into the manicotti pasta and line up in the baking dish. Pour the sausage marinara on top and bake for 35-40 minutes. Remove and enjoy!
