    You should use the spiky side for your pecorino. It dissolves way better

  3. As an Italian and as a BIG Carbonara fan I’d say: nice job! 🙂

    Even in Italy Pancetta is frequently used instead of Guanciale because it’s more easily available (also, it’s somewhat less fat). Don’t tell the Romans though! 😀
