Cucina con noi today will show you how to prepare the tuna linguine, a simple and quick course. The ingredients for 4 portions are: 360 grams of linguine pasta, 500 grams of tomato pulp, 150 grams of tuna in oil, 3 or 4 anchovy fillets, a clove of garlic, one chili pepper, a bunch of parsley, salt, pepper and extravirgin olive oil. Let’s start putting on the stove a pot of water to cook the pasta. Then we mince thinly the garlic and parsley and we start preparing the sauce. Let’s warm up 2 or 3 spoonfuls of oil in a pan, then we add the anchovy fillets, slightly pressing them,/ and we add the garlic. We let everything brown at a very low heat, so that the garlic doesn’t get burnt and the anchovy fillets melt, giving their flavour to the oil. We add the chili pepper and the tomato pulp,/ then a spoonful of hot water/ and some salt, then letting it cook for about 15 minutes. Now we salt the water for the pasta, we dip the linguine in it, while we continue cooking the sauce in the pan. Halfway in the pasta cooking process, we add the tuna into the sauce, adding a spoonful of the boiling pasta water./ Once the pasta is al dente, we drain it and we pan-fry it with the sauce. Now the pasta is ready. We can add a pinch of pepper and the parsley. Let’s mix and serve hot. If we have some tomato sauce, this course is very quick — it just takes a few minutes to prepare. It is important to add the tuna at the end of the cooking process; otherwise, it would get dry and lose some of its flavour.
