One of my favorite Italian pasta recipes is Cherry Tomato Spaghetti. Easy to make, but so authentic and delicious. Perfectly adapt for a vegan diet!

Ingredients:

Whole-grain spaghetti 160g
cherry tomatoes about 20 pieces
garlic cloves as you like
sea salt
extra virgin olive oil

Instructions:

1. Clean the garlic cloves and make little cuts on both sides.
2. Wash the fresh cherry tomatoes and cut them in half.
3. In a pan, put olive oil and add the garlic. Once the garlic becomes a bit yellow, add the cherry tomatoes and salt. Let all cook for about 10-12 minutes on medium hit. Before turning off the heat, add fresh basil leaves.
4. In a large pot, put water to boil. Before it starts boiling, add 1 tablespoon of coarse salt. When it starts boiling, add the pasta and cook it as indicated on the pack. Don’t overcook the pasta!
5. Once the pasta is ready, mix it with the cherry tomato sauce.
