Doesn’t seems so attractive, also the parmiggiano or pecorino cheese, should be mixed with eggs (you can also add it on top, but mainly it should stay with eggs) consider at least 3/4 eggs for a 2/3 people portion or 2 eggs for every person eating 🙂

1)Mix only the yolk with pecorino cheese in a bowl and add that to the pasta at the end (don’t cook it). I use one yolk per 80 g. 2) You can make spaghetti carbonara but there are other types of pasta that you can use 3) Fry the guanciale (or at least the bacon) in a pan, crispy is better 4) No cream, no parsley, ham, onion, ecc… 5) Cook pasta not more than eleven minutes, ten is better, but it depends, certainly not 15 (you have to include the time used to remove the pasta from the pot)
