  1. I love, love pasta fazool. I've never made it with leeks, but have added fennel bulb. I add about a half cup of white wine after sautéing the mirepoix and I like to use fire roasted tomatoes (two small cans) and my favorite pasta, small elbow or ditalini. I sometimes add a half cup of French green lentils along with the white beans. They cook fast! Puree some same as chef. It's one of the best soups. Chef, have you ever made it with ground beef instead of pancetta? I need to try it. Thank you for this wonderful Chanel. It brings so much joy to so many.

  2. This is my favorite soup. If it is on a restaurant's menu, I get it. You are right, not all of them are created equal. Some good, some not so good. I will be making this one. For my taste, the more beans, the better.

  7. I was just asking my older brother about my mom's pasta fazool which is what she called it. It was a thick base but was more whitish. Which more of my family members were around to ask about those recipes. Always ask for those recipes and get a cookbook together, once the older family members are gone, so are the recipes if they weren't written down. I started one for my kids so as I remember, I write them down.
