INGREDIENTS
4 thick salmon fillets
4 handfuls of spinach
90 g of cottage cheese
1 salmon fillet
Nutmeg to taste
Pine nuts
Salt and pepper
Extra virgin olive oil
To complete:
Pomegranate grains to taste
Cook the spinach in a pan with a drizzle of oil. Mix the spinach with ricotta, pepper, salt and nutmeg. Make a cut in the salmon fillet to create a pocket. Fill the pocket with the spinach and ricotta mix and place them on a baking tray. Add pine nuts and pepper. Bake in a convection oven for 12-15 minutes, depending on the size of the salmon and how cooked you want it. Once ready, serve with fresh pomegranate seeds.
