A bit of tomato sauce with bread, is always a good idea… but if we add some cheese, oh my! @GiovanniPeccatodiGola we are ready for you 🥰

INGREDIENTS
1 provola (smoked mozzarella) 250 g approx.
240 g of peeled tomatoes
½ red onion
Basil to taste
Extra virgin olive oil to taste
Fine salt to taste

METHOD
After removing the provola cheese from its water, cut it into slices (generally 4) and drain on absorbent paper. In the meantime, chop the onion and let it simmer over low heat for 10 minutes wth oil and basil.

Mash the peeled tomatoes by hand directly in the pan, add salt, cover with a lid and cook for 20-30 minutes. After removing the basil stems, dip the slices of provola, cover with the lid and let it cook for a few more minutes over low heat.

As soon as the provola has softened, add the hand-chopped basil and you can enjoy the smoked mozzarella, as desired, with bread. If you like a more full-bodied sauce, instead of peeled tomatoes, use tomato puree. You can add chili and/or black pepper.
