I am celiac. These look really yummy. They would probably be really easy to make gluten free. Instead of chocolate, I think putting Nutella in the middle would be fitting.

Is there a reason not to use a piping bag for the melted chocolate? Measuring each portion with a quarter teaspoon seems unnecessarily tedious.
Looks like a winner to me! Would hazelnut flour combined with the all purpose flour work with this recipe? Certainly won’t have the same flavor notes but without a food processor I wonder how to get a close approximation of this cookie
