100g / 3.5oz Almond Flour

100g / 3.5oz Hazelnut Flour

100g / 3.5oz of 1:1 sugar replacement sweetener

200g / 7fl oz Egg Whites

In the north west of Italy we have one thing in abundance: Hazelnuts.
In Valle d’Aosta (the north-western-most region of Italy, where they actually are all bilingua speaking both french and italian due to the proximity with France) they used them to make Tegole Valdostane, a hazelnut based cookie which sweetened most of my childhood summers. As I mentioned them recently in a livestream and was met with enthusiasm here’s the recipe, simple, delicious and actually ORIGINAL as in even the actual recipe wouldn’t ask for anything non-keto except for sugar, for which we can simply have sweetener. If your sweetener is a 1:1 replacement to sugar go ahead with the amounts given in the ingredients down below, in case you’re using something that tends to be sweeter than sugar (I am using Whole Earth stevia blend, is supposed to replace sugar in a 1:3 ratio, so I used 1/3, hence 33g) just adjust to the ratio of your sweetener ๐Ÿ™‚
