    I used about 70-80g of pecorino per person. Maybe it didn’t get creamy enough because of too little pasta water or maybe I should’ve used lots more cheese, but you could certainly taste the cheese while eating the cacio E pepe and I didn’t want it to be too salty. Hopefully it’ll come out better the second time.

    The picture is not super flattering, but if you zoom in you can actually see it’s creamy!
