It’s gnocchi day and what a better recipe than cheese gnocchi? Prepare it with @cookingwithbello4204

INGREDIENTS
400g gnocchi
250g heavy cream
100g milk
250g cheese (here used smoked provola cheese)
1 tbsp mascarpone cheese
50g Parmigiano
Salt
Pepper

Grate the cheese. For this recipe, I used smoked Provola, but you can use Provolone (smoked or regular), Gouda, Edam or Gruyère instead.

In a pan over medium low heat, add heavy cream and milk and let it cook for 2/3 mins or until it starts to bubble. Turn off the heat the heat, add your grated cheese and mascarpone and stir until completely melted. Turn on the heat and cook for 3/4 more mins or until creamy.
If your sauce comes out lumpy, don’t worry! Simply mix everything with a blender and filter your sauce with a sieve.

In the meantime, boil your gnocchi in some salted water for the time indicated on the package. Drain and add your gnocchi to your sauce. Mix everything together, adding a couple of spoons of gnocchi water if necessary.
Turn the heat off, add your grated Parmigiano and some freshly ground black pepper mix one more time.

Sprinkle some pepper and enjoy. Buon appetito!
