Slow Cooker Recipe – Italian Chicken Vegetables and Lentil Soup
This wonderful recipe of Italian Chicken Lentil Soup is my riff on the soup served at every local Italian restaurant that almost everyone loves. With the addition of mushrooms and highly creamy Parmesan cheese, it is the best option if you are fond of cold evenings and want to make them more special and memorable.
This recipe has the pride of being a family favourite recipe. There’s no doubt why this incredibly delicious Italian Chicken Lentil Soup is hands-down the best in town. The simplicity of this soup requires no expensive garnish, but it totally depends on you whether you want to add a glimpse of fresh greenish parsley or freshly grated Parmesan cheese.
Ingredients:
1. Carrots: 4 Medium Sliced (2 Cups)
2. Zucchini (Courgette): 1 Medium Chopped (2 Cups)
3. Onion: 1 Medium Chopped (½ Cup)
4. Dried Lentils: 1 Cup (Sorted and Rinsed)
5. Chicken Broth: 4½ Cups
6. Salt: ½ Teaspoon
7. Black Pepper: ¼ Teaspoon
8. Boneless Skinless Chicken Thighs: 1 Lb
9. Diced Tomatoes: 1 Can (Undrained)
10. Fresh Mushrooms: 1 Cup Sliced (3 Oz)
11. Fresh Basil Leaves: ¼ Cup (Chopped)
12. Shredded Parmesan Cheese (If Desired)
Directions to Make:
1. First, you spray a slow cooker with cooking spray.
2. After that, mix carrots, zucchini (courgette), onion, lentils, chicken broth, salt, and black pepper in the slow cooker.
3. Top the cooker with chicken at the end and cover; cook for at least 5 to 6 hours.
4. Once done, remove the chicken from the slow cooker to the cutting board.
5. Using 2 forks, pull the chicken into shreds and then return it to the slow cooker.
6. Stir in tomatoes and mushrooms. Cover; cook about 15 minutes longer or until thoroughly heated.
7. Transfer the soup into serving bowls and sprinkle each serving with fresh basil.
8. Serve with cheese and enjoy.
