    This looks great, same thing happened to me- lunchtime ragu and pappardelle with a glass of Chianti in a little place in Radda. I still remember the taste of the bay and wine had never sung so loudly but in perfect balance. Obviously I’ve never managed to emulate it, has mythical status in my mind now anyway

  4. Is the recipe traditionally made with cinghiale? I saw it everywhere in Tuscany so assumed it’s a local dish to the region.
