  1. So my family is from Barri. Every year for Christmas we make lasagna and guess what's inside, Tiny meatballs. Takes forever to do but it tastes so good. I found rolling them into a log then cutting pieces and then quickly forming to balls works best

  2. Definitely going to try it. It looks really really good. ☺️ The last time I made meatballs I swear there were half the size of a baseball. An old neighbor who was a sweet little Italian grandma always made the tiny meatballs but she made it with spaghetti in a bit of chicken broth or soup with green sweet peas. It was delicioso.

  9. I love your videos. I’m just a little confused with this one why you wouldn’t cook a proper sauce first with Sofrito, let it reduce and then cook the balls in it. If it’s a time constraint issue, could you have used a pre-made passata? Not sure about this watery tomato sauce. I love you, brother! Go feed yourself!

  12. didn't try the exact same recipe since I dont have rigotta on hand but pretty quick and easy. portioning the smaller meatballs cooks quicker but takes a minute so just find a rhythm and play some jams.

  13. Nah I want big meatballs. If you want meat in every bite just do bolognese/crumbles ground style instead of wasting time making a jillion small balls

  14. The serious explanation is needed, it happens to all our cultures and people are way too quick to say America ruined it when it's just a different evolution of what's available… is it better or worse nah, just different and what we can do.

  15. Have used a 140 cavity silicone candy mold and a disposable piping bag. Spray or brush oil into the cavities and then pipe the meatball mixture into each cavity. Pop out the 140 meatballs and fine tune rolling them.
