The Perfect Almond Biscotti: Mother In Law Recipe!!

Every holiday season, my mother in law was always baking the most amazing Italian cookies. My favorite recipe was her almond biscotti where her kitchen smelled so wonderful with the aroma of roasted almonds and the biscotti were warm and perfectly delicious. I now make them each year for my family and hope you get to enjoy them just as much as my family does! ❤️

INGREDIENTS
4-5 cups of pastry flour
2 cups of granulated sugar
2 cups of almonds roasted
6 eggs
1 cup of butter melted
2 teaspoons of baking powder
2 teaspoon almond extract
2 teaspoons of vanilla extract
Zest of 1 orange
Optional: Add Frangelico, Amaretto or your favourite liqueur

INSTRUCTIONS

1. In a large mixing bowl add sugar, eggs and melted butter with vanilla extract, almond extract and orange zest.
2. Combine baking powder with pastry flour for your dry ingredients.
3. On a baking sheet place 2 cups of almonds and roast in oven at 350F for 7 minutes. Remove and allow them to cool.
4. Mix wet ingredients with dry ingredients adding roasted almonds until fully coated.
5. Once your dough is ready place on your working surface and divide into 2 parts. Roll into a log and add flour. Watch video for instructions on how much flour to add.
6. Place logs onto a baking sheet lined with parchment paper Bake until the logs are golden for approx 25 minutes. Remove and set aside to cool for 15 minutes.
7. On a cutting board, slice diagonally with an electric knife (or bread knife) and place on a baking sheet flat. Place in oven and continue to bake for 7 minutes per side. Watch video for instructions on how to properly cut and thickness of biscotti.

  1. This recipe looks delicious! Do you ever stand your biscotti up for the second bake, so that you don’t have to flip half way through? That is what I typically do, but maybe it’s better to lay on their sides and flip?
