I woke up yesterday and decided to go all out for fun this weekend. Started with a 6 hour bolognese made with organic lamb, beef, veal, pork, chicken livers and pancetta from Eately along with an entire bottle of red wine. Today I made a small batch of tagliatelle from scratch. Letting the sauce sit overnight really let the flavors meld and everything came out perfectly. Enjoy!

The original Bolognese sauce only has pork and beef meat, so I would not call this Bolognese, I’d just call it ragù but it does look/sound delicious!

I would recommend to chop the ingredients for the sofritto smaller and cook the sauce longer to get a thicker and richer bolognese. Tagliatelle look really good 👌
